Recipe To Try In These Last Days Of Summer Season – Whipped Feta And Roasted Cherry Tomatoes Dip

Whipped feta dip with roasted cherry tomatoes is very similar to charcuterie spread and easy to make. As the last days of the Summer season are here and the Autumn Winter season is right at the door, it only makes sense to take advantage of those cool/warm summer days and the best way to enjoying these last warm days should be with your favorite recipe.

Whipped feta dip with roasted cherry tomatoes is a summer appetizer that can be made in 30mins and is also very delicious. The use of locally grown tomatoes or your favorite conventional cherry tomatoes will do the job and they can be roasted for a more flavourful taste.

Here is the recipe below:

Ingredients:

10 Servings

Extra-virgin olive oil

1 cup Greek yoghurt

4 garlic cloves

10 ounces feta, cubed

Kosher salt and freshly ground black pepper

2 pounds cherry tomatoes

Fresh basil, to garnish

10 cut Crostini or toasted bread, for serving

How To:

1. Preheat the oven to 375°F.

2.To Make The Whipped Feta, add the fetta, pinch of salt, drizzle of olive oil, and yogurt in a blender or food processor. Blend until smooth to become a mixture. You can add more olive oil to soften the texture as needed, add a bit more salt & pepper to taste depending on your taste bud. When satisfied with the taste and texture, pour the mixture into a bowl and keep refrigerated while preparing other ingredients.

3. Place the cherry tomatoes on a baking sheet, drizzle a generous amount of olive oil on the tomatoes, season with salt and pepper, fling, and arrange the mix in a single layer. In the preheated oven, transfer the mix to the oven and roast for about 20mins to 25mins and toss until the tomatoes are tender and juicy.

4. Take the feta out of the fridge and pour the feta into a serving bowl, drizzle more olive oil in case it’s gone a little bit dry on top. Place the toasted/roasted tomatoes on top of the feta mixture, add fresh basil for presentation/flavor, and serve with your precut crostini or dip with your favorite toasted bread.
