Ingredients:
Serves up to 20
2 sticks of unsalted butter
2 cups of light brown sugar
2 teaspoons of vanilla extract
1 teaspoon of kosher salt
2 large eggs
2 cups of all-purpose flour
4 tablespoons of granulated sugar
2 tablespoons of ground cinnamon
How To:
1. Preheat the oven to 180°C, Spray your baking trays (you will need 2 ) with nonstick spray.
2. Melt the 2 sticks of butter in a small saucepan or skillet under medium heat, using your silicone spatula, stir the butter for approx 5 to 10 mins until it turns to a brown liquid and smells nutty. Then transfer the liquid into a medium-sized bowl and allow it to cool for approx 5 mins. After it has cooled down, add the sugar, salt, vanilla extract, eggs, and the all-purpose flour then whisk the mixture until the flavor is well stirred in.
3. When the batter is well combined, transfer it into the prepared sprayed pans. At this point the batter will be standing solid in your baking pans, you can now use your silicone spatula to spread them into the corners of the pans and smooth the top (quick note: the spread is thick).
4. Get a small bowl and mix the granulated sugar and ground cinnamon then sprinkle on top of the spread batter. You can now transfer into the oven and bake for approx 20 to 25 mins until golden brown. Allow it to cool down for approx 5 – 10 mins. Then use a butter knife to cut the golden brown blondies into equal squares. Then Serve.
