What is the traditional recipe for Newyear’s eve? Food or Buzz? I believe it’s the buzz, just because new year’s eve is the time we are so excused to get drunk responsibly and the drink is of course champagne.
Champagne is known for celebrations and was associated with royalty in the 17th, 18th, and 19th centuries. It originated and was produced in the Champagne wine region of France where sourcing of grapes with specific grape-pressing methods and secondary fermentation of the wine in the bottle cause carbonation that leads to Champagne.
So in what way can we enjoy the good traditional champagne drink? by adding a few flavours here and there to add more fun to the sips. The flavour of the season is Grapefruit and Sage, the brightness of the grapefruit just makes it the right flavour to celebrate the new year, and the good news is that grapefruit is at its peak right now meaning you can simply buy them in abundance and squeeze them as part of today’s recipe, that is if you’re preparing the cocktail for just of few family and friends, but if the cocktail is for a crowd, then you’re better off with grapefruit juice to save time and energy.

For The ‘Sage Simple Syrup’:
1 cup of water
2 bunches of fresh sage leaves
1 cup of sugar
For the Cocktail:
Pink grapefruit juice / freshly squeezed fruits
Sage simple syrup
Champagne or a sparkling white wine
Fresh sage leaves
- To Make The Sage Simple Syrup: Over medium-high heat, mix the sugar and water in a saucepan. Stir until the mixture starts to simmer and the sugar is completely dissolved, then go ahead and add the sage leaves, stir them in and allow to cook for 30 secs. Set it aside and allow it to cool down, once it’s cooled down you have your simple syrup. Transfer the syrup to a re-sealable container and store it in the refrigerator until ready to use.
- To Make The Cocktail: Shake 6 tablespoons of grapefruit juice or freshly squeezed fruits vigorously to serve a flute, and add 3 tablespoons of the set aside sage simple syrup, 2-3 drops of bitters and mix the mixture using a good shaker, always shake with ice. When well combined, sieve the mixture into a flute with fresh ice, at this point, you can now go ahead and add a half cup of champagne, finish with fresh sage leaves, then serve immediately.
