Oxtail Mac N Cheese In Case You Need A Side Dish This Christmas Season

Who knows Jamaican menu can be so large I was looking through YouTube shorts recently and of course since it’s Christmas season it was all full of Christmas recipe of variety from turkey to stuffed lamb chops, sweet potato plantain corn bread, then came this Oxtail Mac n Cheese – so enticing! – so I went digging.

I found out it’s a Jamaican recipe which if you ask me on how to make it I can’t tell you but what I can say is that the Chef started by displaying the baked Mac n Cheese with the oxtail and cheese sizzling on top. Then he went on to display four variety of cheeses – cheddar cheese is among them, he grated them together then set it aside. In a pot of boiling water, he added one table spoon of salt before adding the macaroni. He allowed it to cook for 12mins, then he added two cubes of butter in a dry pot under a medium heat, then came the unsalted butter whipping cream and evaporated milk, then he added raggae blend by Spice Jamaica, all purpose seasoning by Spice Jamaica, garlic and herb blend then stirred the mixture.

After all these, he was seen shredding the cooked oxtail although he didn’t let us know how he cooked it but I’m assuming he boiled/grilled with onions, garlic, beef stock seasoning, herbs and all kinds of flavours. Anyway, after shredding he added it into the cream mixture with the stock from the oxtail then gave it a good stir. He carried the boiled and drained macaroni and poured it into the cream mixture, after a good stir he transferred the whole Mac n Cheese in a baking porcelain baking tray.

For his final step he sprinkled the set aside variety of cheese on top of the Mac n Cheese along with some set aside shredded oxtail, placed it in the oven at 420 degrees Fahrenheit for 20mins – giving the whole Mac n cheese a golden crispy finish.

The look? – heavenly! It will definitely wake your appetite up. It’s the season where everyone is playing with new recipe that can be added to the traditional Christmas menu. The Jamaican Oxtail Mac n Cheese will make a good side dish – COVET recommends! Happy Christmas!
