Easy Summer Recipe: Skillet Roast Chicken With Peaches, Tomatoes & Red Onions

Ingredients

1 tablespoon butter

1 tablespoon extra-virgin olive oil

Salt and freshly ground black pepper

8 pieces chicken (thighs and legs)

¼ cup chopped fresh basil

½ cup all-purpose flour

4 peaches, cut into thick wedges

2 red onions, thinly sliced

3 tomatoes, cut into thick wedges

2 garlic cloves, diced

¼ cup white wine

How To:

1. Preheat the oven to 200°C
2. Place a large cast iron skillet on medium heat, then go ahead and add the olive oil and butter. Season the chicken with salt and pepper and allow the flour to drench in each piece.
3. Place each chicken piece in the heated pan and allow to cook for 6 – 8 minutes until golden brown then remove the chicken from the skillet.
4. Add the wedge-cut peaches into the same skillet and char for approx. 2 -3 minutes until brown on both sides, remove the peaches from the pan and repeat the same thing with wedge-cut tomatoes and remove the tomatoes
5. Add the red onions into the skillet pan and saute until tender – Aprrpx, 4 -5 minutes. Then add the garlic and cook for 1 minute until fragrant. Make a gravy sauce with wine then add the chicken into the sauce.
6. Open the preheated oven and transfer the skillet pan into the oven and allow to cook for 10 – 12 minutes until the chicken is fully cooked. Finally, add the peaches and tomatoes and allow to cook 3 -5 minutes more.
7. Garnish with basil and serve, Enjoy!
